Ingredients:
- 1 cup whole milk
- 1 cup of sugar
- 5 large egg yolks, lightly beaten
- 3 tablespoons grated lemon zest
- 3/4 cup fresh lemon juice (about 5 lemons)
- 2 cups heavy whipping cream
This lemon gelato is the perfect combination of citrus meets sweet. It is a light, delicate, and refreshing dessert that is perfect for summer. Lemon zest will definitely add a slight kick to the flavor profile of this silky gelato. In a saucepan, heat milk to 175 degrees and stir in sugar, whisked egg yolks, and lemon zest. Cook until it is thick. Stir in lemon juice and cream. Refrigerate several hours. Then you are ready to put into the ice cream maker and freeze according to the manufacturer’s instructions. After frozen, transfer to an ice cream freezer and freeze for another 2-4 hours or until firm.
