4. Baked Tortellini
If you are tired of the routine casserole, try a fresh, creamy and nutritious alternative with this baked tortellini recipe. You can make variations on the choice of vegetables, and make some replacements or additions with pea pods or mushrooms. You can also replace dried basil with fresh basil leaves, if you wish.
1 10-ounce package of tortellini
1 small zucchini, diced
1 onion, diced
2 tablespoon olive oil
1 teaspoon dried basil
1 tablespoon minced garlic
1 medium pepper chopped
½ teaspoon pepper
½ teaspoon salt
1 cup shredded mozzarella cheese
1 cup cream
Cook tortellini in a pot of salted water according to the procedures stated in the directions. In a skillet, place the olive oil and saute the vegetables and seasonings. Drain tortellini and combine along with the vegetables in a baking dish. Add cream and cheese and bake uncovered at 275 for 20 or 30 minutes.
