5. Quinoa-Stuffed Bell Peppers from Damn Delicious
A typical filling for stuffed peppers is the traditional Tex-Mex with rice. We substitute the rice for nutrient-dense quinoa with this alternative recipe.
INGREDIENTS
4-Yellow bell peppers.
3-cups cooked quinoa.
1-can green chili mix.
½-cup canned black beans, drained and rinsed.
1-cup corn kernels.
½-cup diced tomatoes.
½-cup cheddar cheese, grated.
¼-cup feta cheese – crumbled.
3-tablespoons chopped cilantro.
1-teaspoon cumin.
1-teaspoon garlic powder.
½-teaspoon onion powder.
½-teaspoon chili powder.
Crushed Himalayan pink salt and cracked black pepper.
METHOD
Preheat the oven to 350F. Grease a baking dish with grass-fed butter and set aside with the hollowed-out peppers. In a medium mixing bowl, add the green chilies, quinoa, beans, corn, cheeses, tomatoes, cumin, garlic, onion and chili powder along with the chopped cilantro. – Mix until well-combined.
Spoon the filling into the pepper and place, standing up on the baking dish. Top with grated cheese and bake for 30-minutes until the peppers turn soft and the cheese starts to turn golden brown.
