4. Samosa-Stuffed Peppers
These peppers taste like something out of the kitchen of a 5-star restaurant. The spicy filling compliments the taste of the peppers and puts smiles on the faces of your entire family.
INGREDIENTS
2-Yellow bell peppers.
2-tablespoons extra-virgin coconut oil – melted.
1-teaspoon coriander seeds.
1-teaspoon cumin seeds.
¼-cup diced shallot.
1-tablespoon minced ginger.
1-serrano chili – minced.
1-cup feta cheese – crumbled.
½-teaspoon masala spice.
½-cup snow peas.
1-tablespoon fresh lemon juice
Crushed Himalayan pink salt and cracked black pepper.
METHOD
Preheat the oven to 350F. Grease a baking dish with grass-fed butter and set aside with the hollowed peppers.
Place a medium saucepan over medium-high heat with a little coconut oil. Add the coriander seeds and the cumin – cook until the seeds begin to pop. Add the ginger and shallots, along with the serrano chili and a pinch of Himalayan pink salt. Cook for 4-minutes and remove from the heat.
Stir in the lemon juice, snow peas, and masala – season with salt and pepper. Cut the peppers in half and lay on their sides. Stuff the peppers with your ingredients and sprinkle with cheese. Bake in the oven for 230-minutes until the cheese turns golden brown.
