5. Waffle Eggs Benedict
What you need:
Hollandaise:
- ½ cup butter
- 3 egg yolks
- 2 tbsp lemon juice
- ½ tsp dijon mustard
- Dash of cayenne pepper
- Salt and pepper
Waffles:
- 2 cups of flour
- Tbsp of sugar
- Tbsp of baking powder
- Salt
- 1 ¾ cup of buttermilk
- ¼ cup of olive oil
- 2 beaten eggs
- 2 tbsp lemon thyme
Poached Eggs:
- 12 eggs
- 2 tsp white vinegar
Garnish:
- Ham, paprika, and snipped chives
To make:
Prepare the hollandaise by cooking the butter until it is bubbling and hot. It should be a golden color. Add all of the rest of the ingredients to a blender and blend until smooth. Slowly add in the butter while it is still blending. Blend until butter is well incorporated.
Preheat the waffle iron. Mix all of the waffle ingredients together in a large bowl and then cook the batter in the waffle iron. Keep waffles warm in a warmed oven. Poach the eggs in hot water with vinegar. To assemble, place a waffle in the center of a plate and then place two pieces of ham on top. Top the ham with 2 poached eggs and then pour sauce over the top. Finish with a dusting of paprika and some chives.
