4. Fancy Tuna Noodle Casserole
The ideal wintertime dinner, this “fancy” recipe gives a different edge to the meal. Please invite your friends round for dinner and surprise them with this dish.
INGREDIENTS
1-can tuna – drained.
8-oz. Shell pasta, cooked al dente.
4-tablespoons grass-fed butter – divided.
4-tablespoons all-purpose flour.
4-cups chicken broth.
8-oz Shiitake mushrooms – sliced.
1-cup whole raw milk.
¼-cup onion – diced.
1-stalk celery – diced.
1-tablespoon extra-virgin olive oil.
⅛-teaspoon fresh dill – chopped.
1-cup Parmesan cheese – grated and divided.
¼-cup Ritz cracker crumbs
½-tablespoon melted grass-fed butter.
2-teaspoon fresh squeezed lemon juice.
2-tablespoons minced fresh parsley.
¼-teaspoon cracked black pepper.
¼-teaspoon crushed Himalayan pink salt.
METHOD
Place a skillet over medium-high heat. Add the butter and let it melt. Sauté the celery and onions until translucent. Add the mushrooms and cook for another 5-minutes until they begin to brown. Remove the vegetables from the skillet and set aside.
Melt the remaining butter in the skillet and add the flour – whisk until blended. Add the milk and the broth and bring to the boil. Season with dill, salt, and pepper. Stir constantly and reduce the heat after one 1-minute. Add the lemon juice and the parsley along with the parmesan cheese – whisk to combine.
Remove from the heat and add the tuna, pasta, and vegetables with the other ingredients in the casserole dish. Top with cracker crumbs and grated cheese. Bake in the oven for 35-minutes until the cheese turns golden brown.
