1. Turkey Enchiladas
Here’s an idea for cheesy and easy turkey enchiladas. Now you have the perfect recipe to use up your Thanksgiving and Christmas leftovers.
INGREDIENTS
2-cups cooked and shredded turkey leftovers (white or dark meat.)
1-can black beans – drained and rinsed.
2-cups Colby or Monterey Jack cheese.
12-flour tortillas.
2-cups pre-made enchilada sauce.
2-teaspoons cumin.
Chopped cilantro for garnish.
METHOD
Preheat the oven to 375F and grease a casserole dish with grass-fed butter. Lay the tortillas out on a floured work surface. Lay the turkey and beans out in the middle of the tortilla in a line. Top with shredded cheese and cumin powder, then roll the tortilla up tightly.
Speed a cup of the enchilada sauce on the bottom of the casserole dish. Place the tortillas side-by-side on top of the sauce in the casserole dish. Add the remaining sauce and sprinkle the cheese on top. Bake in the oven for 15-minutes until the cheese begins to turn golden brown. Garnish with chopped cilantro and serve.
