2. Lime and Honey Chicken Enchiladas
This enchilada recipe is sweet and savory – all in one dish. The marinade brings out the best flavors for an awesome meal.
INGREDIENTS – Marinade
3-boneless skinless chicken breasts – cooked and shredded.
5-tablespoons fresh lime juice.
6-tablespoons raw honey.
½-teaspoon garlic powder.
1-tablespoon red chili powder.
INGREDIENTS – Enchiladas
1-can green enchilada sauce.
2-cups cheddar cheese – grated and divided.
1-cup heavy cream.
10-flour tortillas.
METHOD
Add the marinade ingredients to a zip-lock bag and toss to combine. Add the chicken pieces to the bag and leave them to marinate overnight in the fridge.
Preheat the oven to 375F and grease a casserole dish with grass-fed butter. Pour some enchilada sauce into the dish and coat the bottom. Lay the tortillas on a floured worktop and place the filling in the center of the tortilla. Top with cheese and roll the tortilla up tightly.
Mix the rest of the enchilada sauce with the sour cream and heavy cream. Place the side of the tortilla by side in the casserole dish and pour the rest of the enchilada sauce on top. Sprinkle with cheese and bake in the oven for 20-minutes until the cheese turns golden brown and bubbly.
