4. Tuna Quinoa Toss
What you need:
2 tsp olive oil
Tsp red wine vinegar
½ tsp fresh lemon juice
½ tsp dijon mustard
Salt
Pepper
½ cup quinoa
¼ cup canned chickpeas drained and rinsed
¼ cup chopped cucumber
Tbsp crumbled feta cheese
5 cherry tomatoes cut in half
A 2.6-ounce package of solid white tuna
To Make:
Combine the first six ingredients in a bowl. Make sure that you stir all of the ingredients well with a whisk. You want it to be well blended. Cook the quinoa according to the package directions. You want it to be fully cooked for the dish. Once the quinoa is cooked, add the remaining ingredients on the list to the quinoa. Drizzle it with the dressing. Toss all of the ingredients together to coat. Serve. This is a dish that is often served as a lunch dish, but it also makes a great dinner dish as well as it is quick, easy, and healthy.
