5. Cod with an Herbed Pea Relish
What you need:
1 cup of frozen green peas, thawed
1 and ½ tbsp fresh oregano, chopped
2 tbsp shallots, chopped
2 tbsp capers
2 tbsp lime juice
2 tbsp olive oil
¼ tsp salt
¼ tsp crushed red pepper
4 cod fillets, 6 ounces each
Tbsp olive oil
To make:
Combine the peas, shallots, oregano, lime juice, capers, 2 tbsp of olive oil, ¼ tsp of salt, and the crushed red pepper. Sprinkle another ¼ tsp of salt over the cod fillets. Heat a skillet over medium-high heat. Add a tbsp of olive oil to the pan and when hot add the cod. Cook the cod for four minutes on each side. When the cod fillets are fully cooked, serve on a plate with the green pea relish. You can choose a favorite side dish to serve with the fish such as asparagus or fried potatoes.
