6. Smoked Salmon Tacos
What you need:
8 oz cream cheese, softened
2 tbsp fresh dill, chopped
2 tsp lemon zest
1 tbsp fresh lemon juice
Salt and pepper to taste
16, six-inch flour tortillas warmed
A pound hot smoked salmon, flaked
1 and ½ cups sliced English cucumber
¼ cup shallot, thinly sliced
16 tsp salmon roe
2 tbsp mint leaves, torn
To make:
Stir the dill, cream cheese, lemon juice, salt, and pepper together in a bowl. Divide the mixture among the 16 tortillas. Top the cream cheese mixture with smoked salmon, the cucumbers, shallot, and the salmon roe. Sprinkle with mint leaves. Roll the tacos up, folding at the bottom. Serve with your favorite side dishes such as freshly roasted asparagus or a fresh green leaf salad. These tacos make a great dinner for any night of the week as they require no baking and can be put together in no time at all.
