2. Ratatouille
This ratatouille recipe is one that everyone should know. It’s an incredibly quick and easy meal that is packed with healthy vegetables and no unhealthy ingredients to compromise that! Not only that, but it’s just as tasty as any of the ‘unhealthy’ things that you probably usually opt for instead.
To make this one, you’re going to need a whole eggplant, one red onion, one red and one yellow bell pepper, and two courgettes. You will also need one 400g can of chopped tomatoes, half a block of goats cheese, and some basil.
Cut up the vegetables so that they are all bite-sized cubes. Now cover in olive oil and place in the oven on 170C for about 40 minutes. Now remove and add the tin of chopped tomatoes and the goat’s cheese broken into bits. Mix it around then add some bits of basil on top. Place back in the oven.
This is best served with some crusty bread – you can eat the ratatouille off the bread and it’s fantastic.
