3. Vegetable Pasta Bake
Pasta bake is a great meal for any occasion and can be made all the tastier if you use eggplant. Here you’re going to be making a bolognaise type sauce/mix and then using eggplant in the place of the ground beef.
So just add a can of chopped tomatoes to the pan and fry it on a medium heat. Add in some chopped onion and some garlic cloves, with plenty of tomato puree. Season with some vegetable Oxo cubes. Meanwhile, you should also be cooking up some pasta in a separate dish.
Now you’re going to add the mixture to the pasta in a shallow baking tray and you’re going to add some chopped eggplant. This should be made into small bitesize pieces and you’ll want at least two whole eggplants.
Cover the top with liberal amounts of cheddar and mozzarella cheese and then bake in the oven for about 30 minutes until the cheese is crispy.
