4. Great-Tasting Macaroni Salad
What you need:
2 cups macaroni
4 tbsp pickle relish, sweet or dill based on personal preference
A cup of celery, chopped
2 tbsp of onion, chopped
A cup of frozen peas
4 hard-boiled eggs, peeled and chopped into pieces
2 tsp prepared mustard
A cup of mayo
Salt to taste
To make:
Bring a large pot of water to a boil. Add a dash of salt and then the macaroni noodles. Cook until the macaroni noodles are tender. Once the noodles are cooked, drain and rinse with cold water. Make sure to drain the noodles well. Cool to room temperature or place in fridge to cool down quickly.
In a large bowl combine the onion, relish, celery, eggs, peas, and salt. Stir in the macaroni. Add the mayo and mustard and blend well. Store in a sealed container for up to a week. If the salad starts to dry out you can add some mayo in order to moisten.
