4 – Tomato Sauce
For the past few years, many friends of mine have practically begged me to share the recipe to my signature tomato sauce. Well, at long last the time has come for me to pass on this family secret and let others reap the benefits of this delicious seasoning.
One superstition that my family has about this sauce is that it needs to be stirred with a wooden spoon or it’ll be bad luck. You start by putting salt, celery, onions, and olive oil into a large saucepan.
Cook the mixture until the onions soften up. This usually takes 15 minutes or so. Be sure to stir the mix every now and then while you cook it. Add garlic into the mixture and cook it for another minute until you start smelling the delectable aroma.
Pour the mix into a bowl and crush the tomatoes until they’re nice and mushy. Add some sugar, salt, anchovies, vinegar, and red peppers into the mixture. Simmer the paste for an hour and a half and then let it cool down.
