2. Quinoa Greek Salad
This one is simply a Greek salad with a bit of quinoa thrown in for good measure.
Do you know what’s so good about quinoa salads? They generally don’t have loads of salad leaves! The most boring salads for sure are the ones that are just jam-packed with lettuce and celery, and we’ve had enough of it!
Greek salads already did away with this problem. Here, you are taking:
- Cucumber
- Red pepper
- Cherry tomatoes
- Feta cheese
Everything is then cubed, and mixed up into a bowl. That’s it! It’s very tasty and much more interesting than even more leaves, but it also feels like something is missing.
The simple solution here then is to add quinoa instead. This will help to make the flavor much more interesting, and the texture of the cucumber is excellent when you find it inside the quinoa. Best bit? It takes about five minutes to prepare and is incredibly healthy!
