5. Dried Fruit and Wild Rice Stuffing with Pearl Onions
This stuffing recipe uses no bread in the method. It’s an ideal mix for anyone that’s gluten intolerant. The fruit gives the stuffing plenty of flavor and tastes excellent with every bite of turkey.
INGREDIENTS
18-oz. Pearl onions, peeled.
6-oz. Dried apricots, chopped.
4-½-cups chicken broth.
1-¼-cups long-grain brown rice.
1-¼-cups wild rice.
3-tablespoons grass-fed butter.
1-cup toasted walnuts, chopped.
1-cup dried blueberries.
1-cup dried cherries.
3-tablespoons chopped thyme, divided.
1-tablespoon coconut oil.
METHOD
Place a skillet over medium heat and add the butter. When it melts, add the onions and sauté for 10-minutes until brown and caramelized. Remove from the heat and set aside. Take a large saucepan and add the broth with a tablespoon of thyme – bring to the boil. Add the rice, cover and let simmer for 40-minutes until the rice cooks.
Stir in the fruits and the remaining thyme. Stir in the pre-cooked onions and the remaining butter. Add the nuts and mix until combined.
Preheat the oven to 350F. Grease a 9×13-inch baking dish with grass-fed butter and scoop in the stuffing mix. Bake in the oven for 30-minutes until brown.
