5. Cabbage and Carrot Herbed Coleslaw
What you need:
2 ½ pounds red cabbage, cut into wedges
2 medium carrots with ends trimmed
12 medium radishes
¼ medium red onion, chopped
½ cup chopped cilantro
¼ cup chopped Italian parsley
1 clove of garlic, finely chopped
⅓ cup freshly squeezed orange juice
¼ cup freshly squeezed lime juice
Tbsp orange zest, finely grated
Tbsp salt
Tsp pepper
⅓ cup vegetable oil
To make:
Fit a food processor with a grating disk and finely shred the carrots, cabbage, and radishes. Place in a bowl and toss until mixed. Place all of the remaining ingredients except for the oil into the food processor fitted with a blade attachment. Process until it is smooth. Keep the food processor running and slowly add in the oil. Process until the oil is fully incorporated. Add the dressing to the vegetables. Mix well. Cover and refrigerate for at least 30 minutes. Stir before serving.
