4. Healthy Coleslaw
What you need:
4 cups napa cabbage, thinly sliced
½ cup green onions, thinly sliced
3 tbsp rice vinegar
2 tbsp peanut oil
1 tbsp fresh ginger, minced
Tsp sesame oil
Tsp sugar
Tbsp toasted peanuts, chopped
To make:
Combine the cabbage and the green onions in a bowl. Add in the vinegar, ginger, sesame oil, peanut oil, and the sugar. Toss until all of the ingredients are well blended. Season with some salt and pepper to taste. Sprinkle the salad with some peanuts and serve. This particular coleslaw recipe has a bit of an Asian twist. The unique flavors of sesame and peanut oil will provide you with some great flavor combinations that will make you think of eastern food. The peanuts provide an extra crunch. This is a great side to any Asian meal that you may be serving such as fried rice and a stir-fry.
