5. Simple Shepherd’s Pie
What you need:
a pound ground beef
1/2 cup onion chopped
1 garlic clove crushed
3/4 cup tomato paste
1/4 cup Worcestershire sauce
1 1/2 cups beef broth
4 cups of frozen mixed vegetables
1 pound white or russet potatoes peeled and cut into chunks
1/4 cup Greek yogurt
1/4 cup milk
1 teaspoon kosher salt
1 cup shredded cheddar cheese divided
To make:
Preheat oven to 350 degrees F. Coat a 1.5-quart baking dish with cooking spray. Peel potatoes. Cut into chunks. Place potatoes into a pot of cold water. Bring potatoes to a boil and cook until tender. When the potatoes are cooking, add the ground beef, garlic, onion, and some salt and pepper to a skillet and cook until the meat is browned.
Drain off the grease and return to pan. Add in the tomato paste, Worcestershire, and beef broth. Stir well. Add in the vegetables, simmer for ten to fifteen minutes. Season with salt and pepper to taste. Drain the potatoes, return to the pot. Add in the cheese, yogurt, milk, and salt and mash. Add the meat mixture to the casserole dish and then top with the mashed potatoes and the cheese. Bake for 30 to 35 minutes or until potatoes has browned.
