4. Mojito Fruit Salad
Relax, this is a non-alcoholic recipe that’s suitable for the children as well. We decided to name this fruit salad after the tropical cocktail because it contains mint and cane sugar, and tastes remarkably similar to the classic drink.
INGREDIENTS
4-cups chopped watermelon.
2-cups strawberries, hulled and sliced.
6-oz. Fresh raspberries.
6-oz. Fresh blueberries.
¼-cup packed mint, roughly chopped.
¼- cup lime juice.
3-tablespoons confectioners’ sugar.
METHOD
Take a large mixing bowl and add the blueberries, raspberries, strawberries, and the watermelon along with the mint.
In a separate small bowl, whisk together the confectioners’ sugar with the lime juice until the sugar partially dissolves. Pour over the fruit and chill in the fridge for 1-hour to set up. Letting the fruit sit in a chilled environment will enhance the flavor of the berries and pineapple.
Make a few extra batches of the salad and store it in the fridge for a leisurely morning meal during the week.
