5. Jerk-BBQ Chicken Skewers
Bring a taste of the Caribbean to your grill with this recipe for Jerk-BBQ chicken. Best cooked over an open flame grill, don’t be afraid to char the chicken skin a little. Remember to cook the chicken in the microwave for 5 to 10-minutes before you take it to the grill.
6-skinless and boneless chicken thighs.
2-cloves minced garlic.
2-scallions, chopped.
¼-teaspoon cayenne pepper.
1-cup chopped parsley.
2-tablespoons extra-virgin olive oil.
2-tablespoons lime juice.
INGREDIENTS -Lime Chili
3-tablespoons lime juice.
2-tablespoons olive oil.
3-tablespoons chopped parsley.
2-teaspoons chopped rosemary.
1-chopped red chili.
4-scallions, chopped.
METHOD
The day before your cookout put the chicken in a ceramic dish. Add the parsley, onion, cayenne pepper, garlic, lime juice, and olive oil to a food processor and puree. Rub all over the chicken and leave overnight in the fridge.
Combine all of the lime chili ingredients in a medium mixing bowl and add ¼-cup boiling water. Mix well and set aside.
Preheat the grill to high heat. Cook the chicken for 10-minutes, until the skin chars and the meat turns white. Spoon the sauce on the chicken as it dries.
