5. Chicken with Cashews
What you need:
For the sauce:
Tsp soy sauce
Tbsp sweet dark soy sauce
Tbsp fish sauce
Tbsp brown sugar
Tbsp water
For the stir-fry:
2 tbsp vegetable oil
2 cloves garlic, minced
½ small onion quartered
4 dried red chilies cut into halves
½ cup cashew nuts
8 ounces chicken breast cut into small strips
1 green onion, cut into one-inch pieces
To make:
Combine all of the sauce ingredients in a bowl and whisk together until blended. Set aside. Heat the oil in a large frying pan or wok. Once the oil is hot, add in the cashews. Fry the cashews until browned. Remove from the oil and set aside. Add the garlic, onion, and the chiles to the oil. Cook for about 5 minutes. Add in the chicken and cook until it is cooked through. Return the cashews to the pan and stir. Add the sauce into the wok and stir until everything is coated. Turn off the heat and add in the green onion. Serve with a side of jasmine rice.
