4. Pizza Paco Taco Balls
These bite-sized delights are perfect to serve for munchies on game day or as an appetizer before a dinner party.
INGREDIENTS
1-shredded rotisserie chicken.
½-cup mozzarella cheese
½-cup ricotta cheese
Garlic powder.
½-=teaspoon chili powder.
1-finely diced tomato.
1-cup refried beans.
1-large egg.
Leftover pizza dough.
METHOD
Preheat the oven to 350ºF. Spray a muffin tray with olive oil and set aside. In a medium mixing bowl, combine the shredded chicken, mozzarella, garlic and chili powder, refried beans, and diced tomatoes.
Create 6-inch-wide circles from the dough and line the muffin cups in the tray. Line the bottom of each dough pocket with a slice of ricotta cheese and fill the rest with your paco mixture. Close up the pouches and beat the egg until fluffy. Brush the tops with egg and send it to the oven for 20-minutes until golden brown. Transfer to a cooling rack for 5-minutes, and serve.
