5. Spanish Sausage Supper
This is a really easy dish to make any night of the week. You only use one pot, which makes for easy cleanup. In addition, it has flavors that the whole family will enjoy. Here is what you need:
½ cup green pepper, chopped
⅓ cup celery, chopped
¼ cup onion, chopped
Tbs canola oil
1 pound fully cooked smoked sausage rope, sliced into bite-sized pieces
2 cups of water
A 10 ounce can of diced tomatoes with green chilies
A 6.8-ounce package of Spanish rice mix
¼ cup pimiento-stuffed olives, sliced
Pepper
To make:
Heat the canola oil up in a large skillet. When hot, add in the celery, onion, and green pepper. Saute the vegetables until they are tender. Stir in the smoked sausage rope pieces, the water, the tomatoes, Spanish rice, and the olives. Season with a bit of pepper. Cover and simmer for 15 to 20 minutes or until the rice is tender and the liquid has been absorbed.
