5. Jalapeño Macaroni and Cheese.
In this delicious yet spicy version of baked macaroni and cheese, we use a combination of normal cheddar cheese and Boursin cheese. Depending on how much spicy you can take, you can substitute jalapeño peppers with mild green chiles or use a mixture of the two. If you don’t have fresh jalapeños, use a can of chopped jalapeño peppers instead.
After having cooked the macaroni, melt 4 tablespoons of butter in a saucepan. Add 3 tablespoons of flour and stir till all bubbly. Pour in 1 ½ cups of whole milk and 5 ounces of Boursin cheese. Stir well till thickened. Add in 8 ounces of shredded cheddar cheese and 4 ounces (a can) of jalapeño peppers. Stir well till all melted. Season with salt and pepper to taste. Blend the mixture well with the cooked macaroni and put all into a greased baking dish. Sprinkle buttered breadcrumbs on top and bake for about 25 minutes. It’s now ready to serve!
