5. Old Fashioned Strawberry Rhubarb Pie
What you need:
- Prepared pie crust
- 4 ½ cups of chopped rhubarb
- 3 cups of cut-up strawberries
- ¾ cup of sugar
- ¼ cup of cornstarch
- Pinch of salt
- 3 tbsp of butter
- Egg wash
To make:
Preheat the oven to 425 degrees F. Roll out half of the pie dough and transfer to the pie pan. Refrigerate while preparing the filling. Place the strawberries, rhubarb, cornstarch, sugar, and the salt in a bowl and mix together. Pour the mixture into the prepared pie crust. Dot with the butter.
Roll out the other piece of dough and cut it into strips. Create a lattice pattern over the top of the filled pie. Trim any excess dough. Brush the top with the egg wash. Bake at 425 degrees for 20 minutes. Lower the heat to 350 degrees and bake for 45 more minutes or until the crust is browned. Cool for at least 2 hours and then serve.
