5. Memphis Beer Can Chicken
This Memphis style rub makes for a tasty chicken. Here is what you need:
- 4 pound chicken
- Can of beer
Rub:
- 2 tbsp brown sugar
- 2 tsp paprika
- Tsp salt
- ½ tsp each of dry mustard, cayenne pepper, black pepper
To make:
Combine all of the rub ingredients together in a mixing bowl and set aside. Preheat the grill on medium heat. Clean the chicken by removing the neck and the giblets. Rinse with cold water and then pat dry. Take half of the rub mix and apply it to the chicken. Open the beer and remove half. Add the rest of the spice mix to the beer. Swirl in order to combine. Pierce a couple of holes into the top of the can. Place the chicken on top of the can of beer and then place on the grill. Cook for about 2 hours or until chicken is cooked through. Remove from heat, let rest ten minutes, carve and serve.
