6 Sofrito Chutney
This one is another slightly different recipe, as it is going to make for a sofrito that is sweet and somewhat sticky – and just a little bit spicy. This is a tasty and slightly more unusual side to serve up with some meat – more interesting than the usual side salad for instance.
To make this one, you are going to take half a can of tomatoes, a little bit of olive oil, one chopped red bell pepper, one chopped apple, 2 tablespoons of mango chutney, a handful of raisins, one chopped red onion, and some chili powder to taste.
The resulting concoction should be spicy but sweet, with a tangy flavor and a satisfying crunch!
What to do with this chutney? Try this:
For this meal, you’re going to cook up the same sofrito chutney that we saw earlier, and then we’re going to create some meat for the side that will go with it perfectly. That’s going to be some small pieces of diced chicken, which you will dip into the egg white and then roll in bread crumbs. Arrange on a baking tray and squeeze a little bit of lemon juice on top all around. Next, place all of this in the oven on about 200C and cook for half an hour.
When you dish this up, serve with the sofrito on the side, and a dollop of mayo. Try to get all three on a spoon and the taste is fantastic!
