5 Sofrito Salad
We’re calling this one sofrito salad because it is a lot more varied in terms of its ingredients – turning it into something that you can almost eat on its own.
To make this one, you are going to need:
- 2 green peppers (seeded and chopped)
- 1 red pepper
- 4 romano peppers
- 1 green chili
- 3 medium tomatoes
- 4 onions
- 3 medium heads of garlic
- 1 bunch of coriander
- Salt and pepper to taste
You’re then going to use pretty much the same recipe as before – taking all of these ingredients and frying them for about 20 minutes in some oil. This time you are going to use just a little oil, however, making for a much drier finished product that will taste fresh and healthy.
This is a great side to go alongside a host of other foods and is another example of just how healthy Mediterranean cooking is.
