4 Dairy-Free Banana Muffin
Creating a gluten-free banana muffin is a great trick to have up your sleeve, even if you aren’t gluten intolerant yourself. The reason for this is of course that you’re going to want to be able to make those banana muffins for others who might be gluten sensitive.
That’s also why it’s great to be able to make a dairy-free banana muffin. The simple fix here is to swap out your milk for almond milk. That almond milk is going to taste nutty, smooth, silky, and slightly sweet if you choose to go with the sweetened kind. Either way, it’s subtly different from cow’s milk, but it still works really well!
Note as well that if you want to make this into a vegan-friendly option, then you can also try swapping out the eggs. Chia seeds work really well here and will absorb yet more liquid to help bind everything together. While you’re at it, you could also try coconut oil in place of the vegetable oil!
