5. Spicy Kimchi and Cheese Corn On The Cob
This is one addictive style of grilled corn from Korea. If you love the spicy heat of Kimchi as we do, this is right down your alley. The cheese and mayonnaise cut the burn and tempers it out. Kimchi can be found in the health food section of your local grocery store, or you can go to the Asian supermarket to pick up a jar. Since it’s been fermented, it’s loaded with probiotics and healthy gut bacteria, which recent research has shown to be extremely important to your body’s overall balance. Gut bacteria have now been correlated with weight gain/weight loss, mental health, skin health, and a whole host of other things. Getting a good dose of it in the most delicious way is a win-win situation!
Ingredients
- 4 corn on the cob
- 1/2 cup kimchi, minced
- 1/4 cup mayonnaise
- 1 cup shredded mozzarella cheese
- Salt and pepper to taste
- Diced scallions or chives for garnish
Directions
1. Boil corn for 10 minutes in salted, buttered water, until kernels are tender. Alternatively, salt and smear butter on corn and grill over high heat until lightly charred.
