5. Creamy Green Bean Casserole
What you need:
- 2 12 ounce packages of frozen french style green beans
- 8 oz of crimini mushrooms, cut
- 3 tbsp of butter
- A small onion, thinly sliced
- Tbsp chopped parsley
- 2 tbsp of flour
- ½ tsp of lemon zest
- ½ tsp of salt
- Pinch of pepper
- ½ cup of milk
- 1 cup of sour cream
- ½ cup of shredded cheddar cheese
- 2.8 oz can of French fried onions
To make:
Preheat the oven to 350 degrees F. Place the beans into a pan and fill with about half an inch of water. Bring the water to a boil and steam until beans become tender. Drain and then toss in the mushrooms. In a large skillet, melt the butter over medium heat. Add in the onion and the parsley. Cook until onion is tender.
Add in the flour and then mix in the salt, pepper, and lemon zest. Whisk in the milk and stir constantly so no lumps form. Add in the sour cream. Warm until sauce bubbles. Add in the beans and mushrooms, stir to coat. Remove from heat and toss with cheese and some of the fried onions. Spoon into a casserole dish and then top with onions and cheese. Bake for about 15 minutes or until cheese melts.
