5. Cilantro French Fries
If you enjoy the flavor of cilantro, you are going to love these fries. Here is what you need:
- A quart of oil to use for frying
- 3 large potatoes, sliced thin or julienned
- 3 cups of fresh cilantro, chopped
- Salt and pepper to taste
To make:
Heat the oil in a deep-fryer or large pan. The oil should reach 365 degrees. Prepare the potatoes while the fryer is heating by cutting them thinly. Place ⅓ of the potatoes into the fryer and then fry for five to eight minutes, or until they are almost cooked through. Add in ⅓ of the cilantro and fry for another minute. Remove with a slotted spoon and drain the oil. Repeat with another third of the potatoes and the cilantro. Then cook the final batch. Remove the cilantro from the fries. Season the potatoes with some salt and pepper to taste and serve with your favorite dips.
