4. Sticky Sweet Chili Cauliflower
This dish contains crispy cauliflower coated in a tasty sweet chili sauce. It’s a sticky surprise that drives the senses wild. Treat yourself and your family with this fantastic vegetarian dish.
INGREDIENTS
12-whole cauliflower head, chopped into florets.
½-cup cornstarch.
3-cups coconut oil.
1-tablespoon grass-fed butter.
4-cloves minced garlic.
1-teaspoon grated ginger.
1-1/2-tablespoons crushed chilies.
¼-cup brown sugar.
1-teaspoon low-sodium soy sauce.
1-teaspoon rice wine vinegar.
1-cup sweet chili sauce.
¼-cup chopped scallions for garnish
Crushed Himalayan pink salt and cracked black pepper.
METHOD
Place a skillet over medium-high heat. Heat the coconut oil and then deep-fry the cauliflower florets until golden brown then set aside. In a wok, add the butter and melt over medium heat. Add the butter and the garlic, sauté until browned.
Add the chilies, ginger, wine vinegar, sugar, soy sauce, and sweet chili. Whisk until everything combines. Wait for the sauce to reduce and then add the fried cauliflower florets. Toss until coated and then remove from the heat Serve with scallions for garnish.
