5. Thai Peanut Chicken
This dish offers a perfect blend of sweetness, nuttiness, and just a bit of spice. Here is what you need:
2 pounds of boneless and skinless chicken breasts
2 garlic cloves minced
2 bell peppers, sliced
¼ cup of soy sauce
2 tablespoons of honey
2 tablespoons of rice wine vinegar
Half of a teaspoon of red pepper flakes
¼ cup peanut butter
¼ cup chopped peanuts
2 tablespoons of cornstarch
¼ cup of water
To Make:
Add each of the ingredients to the slow cooker except for the peanuts, peanut butter, cornstarch, and water. Cook on low for eight hours or high for four hours. Once cooked, add the peanut butter to the slow cooker and mix them in. In a bowl, mix the water and cornstarch together.
Pour into a saucepan and heat over medium heat. Stir until it becomes thick and then pour into the slow cooker. Cook for about ten more minutes. Serve the chicken dish over rice. Top it with green onions and the chopped peanuts.
