4. Asian Barbeque Fusion Chicken
If you are looking for something a little bit different to put on your menu, you cannot go wrong with this Asian barbeque chicken.
What you need:
6 skinless chicken thighs
¼ teaspoon each of onion powder, paprika, and chili powder
3 garlic cloves minced
A jalapeno finely chopped
¼ cup honey
⅓ cup of soy sauce
Juice from a single lemon
A tablespoon of sesame oil
½ cup each of barbecue sauce and tomato sauce
A tablespoon of cornstarch
¼ cup of water
Sesame seeds, toasted
To Make:
Place the chicken thighs into the bottom of the crockpot. Sprinkle the spices over the chicken. Add in the rest of the ingredients except for the cornstarch and water. Cook the chicken mixture on high for four to six hours or on low for eight hours. After the chicken is cooked, mix the water and the cornstarch together in a saucepan until blended. Add in about a half of a cup of the liquid from the slow cooker.
Heat over medium-high heat until thickened. Add this mix to the slow cooker and let it cook for around ten minutes or so. Serve the chicken over a bed of rice and top it with the sauce and some of the sesame seeds.
