Trade out your all-purpose flour for buckwheat flour for this recipe. INGREDIENTS
2-cups buckwheat flour.
1-1/2-cups whole raw milk.
½-stick grass-fed butter, melted.
Olive oil spray.
½-teaspoon crushed Himalayan pink salt.
1-large free-range egg.
¼-cup brown sugar.
1-1/2 cups ricotta cheese.
2-grapefruits, peel, and pith removed.
1-navel orange, pitted and peeled.
1-clementine pithed and peeled.
Raw honey for serving.
DIRECTIONS
In a large mixing bowl, whisk together the flour, baking powder, and salt. In a separate bowl, whisk together butter, milk, and egg. Stir mixture into the flour mix and let the batter stand for 15-minutes.
Preheat the oven to 175F and turn on the waffle iron. Lightly coat the machine with olive oil spray. Add the waffle mixture and leave a ¼-inch border to compress efficiently. Cook waffles until golden brown, adding them to the oven until you finish the batter.
Cover waffles with the citrus fruit serving with raw honey.
