2. Salt Cod Croquettes with Ouzo and Spices
Cod is a Greek fish favorite. The ouzo compliments the dish and offsets the salty flavor of the fish. Put this recipe together in minutes, and enjoy a nutrient-dense, healthy seafood dish full of flavor.
INGREDIENTS
1-½-lbs. Cod fillets.
2-cups orzo pasta.
2-leeks, chopped.
2-tablespoons fennel, chopped
2-tablespoons dill, chopped
¼-cup parsley, chopped
1-teaspoon cumin.
1-teaspoon nutmeg.
Crushed Himalayan pink salt and cracked black pepper.
2-tablespoons Ouzo liqueur.
Almond flour for dusting.
Olive oil for frying.
METHOD
Debone the cod and puree the leeks in the food processor. Add the cod and spices – pulse until pureed. Add the ouzo, salt, and pepper and keep blending. Add the egg and process till smooth. Add the sauce to a medium mixing bowl and place in the fridge to set up.
Place a saucepan over high heat, add 4-cups of water and bring to the boil. Add the orzo pasta and reduce the heat. Cover the pan with a lid and let the pasta cook for 10-minutes.
Place a half-cup of flour onto a large plate. Roll the cod mixture into ping-pong-sized balls and dust. Place a saucepan over medium heat and fry the cod croquettes till golden brown.
