3. Chickpea Nuggets
Who needs chicken nuggets made with pink slime, when you can make a healthy and nutritious version at home?
INGREDIENTS
1-can chickpeas, don’t drain.
½-cup steel cut oats.
½-cup breadcrumbs.
½-teaspoon kosher salt.
½-teaspoon onion powder.
½-teaspoon garlic powder.
METHOD
Place an oven rack in the center and preheat to 375F. Place the Panko onto the tray and bake in the oven for 5-minutes until crispy. Add the oats to a food processor and grind into powder, you can also use a coffee bean grinder for best results.
Drain the chickpeas and reserve a ¼-can of the water. Add to the food processor along with garlic, salt, and onion powder – pulse until smooth. Whisk the chickpea water in a medium mixing bowl until foamy before adding to the food processor – pulse till smooth.
Shape small nuggets from the batter and dust with flour. Place on parchment paper on the baking tray and cook in the oven for 15 to 20-minutes until brown and crispy.
