7. Italian herb bruschetta chicken
This dish is so packed with flavor that you’ll swear it isn’t healthy for you – but it is! The ingredients include boneless, skinless chicken breasts, Italian seasoning, minced garlic, olive oil, salt, chopped Roma tomatoes, chopped red onion, fresh basil, balsamic vinegar, shaved parm cheese, and brown sugar. Start by halving the chicken breast so they are thin, then season with Italian seasoning, garlic, and salt.
Heat the oil in a pan and brown the chicken. Remove the chicken from the pan and set aside. Add the balsamic vinegar to the pan and bring to a boil, then reduce the heat to low, allowing it to simmer for about 8 minutes and it has thickened to a glaze. Place the chicken back in the pan and toss in vinegar. Add in the roma tomatoes and cook until softened. Top with parm cheese and heat until melted.
