10. Breakfast Burritos
Breakfast is the most important meal of the day, so make sure you get it right. Give bacon and eggs a new edge, and try this mouthwatering recipe for breakfast burritos.
INGREDIENTS
10-flour tortillas – warmed.
12-large free-range eggs.
12-bacon strips – chopped into 1-inch pieces.
¼-teaspoon cracked black pepper.
½-teaspoon kosher salt.
1-½-cups shredded cheddar cheese.
4-green onions – sliced thin.
METHOD
Place a cast-iron skillet over medium-high heat and add the oil. When the skillets hot, add the bacon and fry until crispy. Remove from the pan and drain on paper towels. Leave the drippings in the pan and add whisk together the eggs in a separate mixing bowl with some salt and pepper.
Pour in the egg mixture into the pan and stir until the eggs solidify and no liquid egg remains. Remove from the stove and set aside with the bacon.
Spoon the bacon and eggs into the center of a tortilla and top with some cheese and chopped green onion. Fold into burritos and serve with salsa.
