3. Baked Chicken with Broccoli Rice
This is a chicken and rice casserole dish that everyone will love.
What you need:
Tbsp olive oil
Tsp minced garlic
2 cups of broccoli florets
½ cup of cut-up chicken breast pieces
½ tbsp melted butter
2 cups of cooked white rice
6 tbsp of shredded mozzarella
Tbsp dried basil
For the sauce:
½ cup of chicken stock
½ cup heavy cream
¼ cup of white wine
Tbsp softened butter
1 and ½ tbsp flour
Salt and pepper to taste
To make:
Cook the rice according to the package. When cooked, pour into a 9×13 inch baking dish. Mix the butter, garlic, olive oil, and basil together and pour over the chicken. Add the chicken to the rice. In a saucepan add the chicken stock, butter, and white wine. Heat until butter is melted. Stir in the heavy cream. Simmer until it begins to thicken. Slowly add in the flour until the sauce begins to thicken.
Once the flour is integrated into the sauce and there are no more lumps, pour the sauce over the chicken and rice mixture. Bake at 350 degrees or 30 to 45 minutes, or until chicken is cooked through. Sprinkle with cheese and return to oven for a few minutes until the cheese melts.
