4. Protect the Edges
Have you ever looked at a store made pecan pie and wondered why the edges were so brown? Perhaps you have made several types of pies and always have crust edges that are darker in color. While this is not something that totally ruins a pie, it does set the appearance off a bit. In order to prevent the edges of the crust from becoming a dark brown, simply shield the edges of the pie with some foil.
You can do this easily by folding a 12 inch square of foil into quarts. Cut a 7-inch circle out from the center and discard. Unfold the square and then place the remaining foil over the top of the pie. The foil will help to keep the edges of the pie from turning dark brown and will help to create that perfect crust that you want for your great tasting pecan pie.
