4. Savory Pumpkin Quiche
What you need:
3 large eggs
15 oz can solid pack pumpkin
5 oz can evaporate milk
½ lb bacon, cooked and crumbled
½ cup of sliced mushrooms
¼ cup onion, chopped
¼ cup green pepper, chopped
½ cup parmesan cheese
Tbsp of flour
A frozen pie crust
To make:
Preheat the oven to 375 degrees. In a bowl whisk the eggs, milk, and the pumpkin together until smooth and well blended. Add in the bacon, onion, pepper, and mushrooms. Toss the cheese with the flour and stir into the egg mixture. Pour the egg mixture into the pie crust.
Bake on a low oven rack for about an hour. When done a knife inserted into the middle of the quiche should come out clean. Let cool for about fifteen minutes before serving. You can sprinkle nutmeg over this quiche if desired.
