4. Mexican Volcano Dip
What you need:
8 oz softened cream cheese
½ tsp garlic powder, divided
¼ tsp cayenne pepper
½ tsp each paprika, onion powder, chili powder, and cumin
1 can black beans, drained and rinsed
¼ tsp each onion powder, and salt
¼ tsp lime juice
½ one large tomato, seeded and diced
½ white or yellow onion, chopped
cilantro and shredded cheese for topping
To make:
In a bowl mix the cream cheese with a hand mixer for about two minutes. Add in the garlic powder, cayenne pepper, paprika, chili powder, chili powder, and cumin. Mix well. Scoop this mixture into the center of a large serving plate.
Make a crater in the center using the back of a spoon. In a small bowl combine the black beans, onion powder, ¼ tsp garlic powder, and the lime juice. Mix to combine. Spoon 2 or 3 tbsp of the black beans into the crater that you created in the cream cheese.
Spread the rest of the black beans around the cream cheese base. Place onions and tomatoes on the edge of the black beans. Sprinkle cheese and cilantro over the entire plate. Chill. Serve with tortilla chips.
