6. Zucchini Bruschetta
You are not going to miss the bread in this tasty bruschetta that uses zucchini slices instead.
Here is what you need;
6 diced Roma tomatoes
2 cloves of garlic, minced
8 basil leaves cut into thin slices
Tbsp olive oil, plus more for brushing
Tsp balsamic vinegar
Dash of salt
Dash of pepper
A large zucchini
Cooking spray
¼ cup parmesan or mozzarella cheese
To make:
Preheat the oven to 375 degrees F. Mix the tomatoes, olive oil, basil, vinegar, salt, and pepper in a bowl. Set the tomato mixture to the side to allow the flavors to meld while you are preparing the zucchini. Slice the zucchini into thick slices, about a quarter of an inch thick. Place the zucchini slices onto a baking sheet that is sprayed with cooking spray. Brush the top of the zucchini with some olive oil. Bake for 2 minutes in the oven. Remove from the oven and spoon the tomato mixture onto the tops of the slices. Top with cheese, return to the oven and bake for two more minutes.
