7. Grilled Zucchini Rolls
What you need:
2 medium zucchini
Tbsp olive oil
Salt and pepper to taste
1 ½ ounces herbed goat cheese
½ roasted red pepper, diced
2 tsp capers
To make:
Preheat the grill on high heat. Slice the zucchini lengthwise to expose the inside. Discard or save for another use. Cut the ends of the zucchini to create straight edges and then slice into ½ inch strips. Brush the sides with olive oil and season with salt and pepper. Place on grill and cook until tender, but not mushy. Remove from grill and set on a wire cooling rack
When the zucchini has cooled enough to touch, spread a tsp of goat cheese on each of the slices. Divide the capers and red pepper among the slices. Roll up each of the pieces and then serve. This should make about eight to ten rolls.
