4. Roasted Tomato Guacamole
This is the perfect choice for some avocado toast in the morning. It is also great served as a dip for your favorite vegetables or chips. Here is what you need:
- 2 cups of cherry tomatoes, cut in half
- Tsp of olive oil
- Salt and pepper to taste
- 4 large avocados
- ¼ cup of chopped red onion
- A clove of minced garlic
- Juice of one lemon
- ½ cup of chopped basil
To make:
Preheat the oven to 425 degrees. Toss the tomatoes with olive oil and some salt and pepper. Place the tomatoes in a single layer on a baking dish. Roast the tomatoes for about 15 to 20 minutes. Remove from the oven and let cool. Cut the avocado in half and remove the pits. Place in a bowl and mix in the onion, garlic, lemon juice, and some salt and pepper. Use a fork or a potato masher to mix the ingredients together. Add in the basil and a third of the tomatoes. Fold together. Spread the guac on a platter and serve topped with the roasted tomatoes.
