3. Use Grass-fed Butter
Butter is an essential ingredient in your snickerdoodle batter, and it provides a leavening effect that allows the cookies to rise and gain their airy center. Unfortunately, the dairy industry is also affected by industrial farming methods, and most farmers choose to pump their dairy cows full of hormones and antibiotics for the same reasons as chicken farmers – to increase production to meet the growing demand.
Using this type of feed results in sub-standard dairy products – laced with trace amounts of toxins. We prefer to use unsalted grass-fed butter in our recipe. Grass-fed butter comes from dairy cows allowed to roam in pastures and feed on grass, not synthetically enhanced feed. The result is a creamier butter with a smoother texture and enhanced flavor.
Grass-fed butter is a far healthier option and is available from farm stalls or your local organic market. Remember to leave your butter out of the fridge for at least an hour before using it in your batter.
